CRANBERRY NUT MUFFINS

 I just finished eating one of these delicious Cranberry Nut Muffins and realized I hadn't shared it with you. This muffin recipe only has 1 cup of sugar in it. I reduced the sugar calories by using 1/2 cup of a sugar/stevia blend. That means the tartness of the fresh cranberries is really prominent. I also used pecans and they are awesome!

You might get to enjoy these muffins if you stayed at the Captain Ezra Nye Guest House which was built in 1829 by the sea Captain in Sandwich, MA. I found the recipe in Volume One The American Country Inn and Bed & Breakfast cookbook. They freeze nicely too which is nice since the recipe makes 20 - 24 muffins depending on the size you make. I just put one frozen in the microwave and heated for 1 min at 30% power and then 30 seconds on High. Just as good as right out of the oven.

I made 12 regular sized muffins and 12 slightly smaller mini Bundt muffins.



CRANBERRY NUT MUFFINS

2     eggs

1     cup milk (I used skim milk)

1/2  cup oil

*     *     *

3     cups flour

1     cup sugar (I used 1/2 cup sugar/stevia baking blend)

4     teaspoons baking powder

1     teaspoon salt

*     *     *

2     cups cranberries (I cut any large ones in half)

3/4  cups chopped nuts (I used pecans)


Preheat oven to 400 degrees F. Spray or well grease muffins tins for 24 muffins. Set aside.


In a large mixing bowl combine the eggs, milk, and oil with a whisk. Set aside.


In a separate bowl, sift together the dry ingredients, and

mix into the egg mixture until

just moistened. 


Add the cranberries and the chopped nuts. (A large number of my fresh cranberries were small so I cut the large ones in half.)


Divide the batter among the muffin cups.











(If you are using tins for 24 muffins, but do not have enough batter to fill all of the cups, pour a little water in the cups you don't fill with batter so the muffins will cook evenly.)


Bake for 20 minutes.


Remove and cool on a wire rack.









If you choose to freeze some, you can heat one up in the microwave on a paper towel for 1 min at 30% Power. Then heat for 30 seconds on High.
