CINNAMON ROLL SKILLET CAKE

   I decided it was time to have a dessert in the house just for us. A friend from Iowa, Jim, had shared the recipe a while back on Facebook and I had copied it down. I just never got around to trying it. Since Wayne and I both really like cinnamon rolls, what better dessert to have on hand than a Cinnamon Roll Skillet Cake. Right?

OMG! And it is so good. Taste like a cinnamon roll if it were a cake. It's still a lot for just us to have to eat, so I have already taken about a fourth of it to Friend Fran to enjoy! 

The recipe called for gluten-free flour so it could be a good cake for people who have issues with gluten. I just used regular all-purpose flour without any problems with the outcome of the cake. 


CINNAMON ROLL SKILLET CAKE

CAKE

1-1/2    cups gluten-free flour (I used regular all-purpose flour)

1/2       cup sugar

2          teaspoon baking powder

1/4       teaspoon salt

3/4       cup milk

1          egg

1/4       cup unsalted butter, melted

1          teaspoon vanilla

CINNAMON SUGAR TOPPING

1/2       cup unsalted butter, melted

1/2       cup light brown sugar, packed

1          teaspoon cinnamon

VANILLA ICING GLAZE

1-1/2    cups powdered sugar

3          tablespoons milk

1          teaspoon clear vanilla



Preheat oven to 350 degrees F. Grease a 9-inch cast iron skillet and set aside.


In a large mixing bowl, add flour, sugar, baking powder, and salt. Stir with a whisk to blend.

Combine milk and egg with a whisk and then add the melted butter and vanilla. Add liquid mixture to dry ingredients.

Stir well to incorporate with a wooden spoon.



Pour cake batter into skillet. Set aside.


In a small bowl combine the brown sugar and cinnamon til well blended.

Add melted butter and

stir til smooth.

Drop by teaspoonfuls around on top of batter in skillet.

Take a butterknife and swirl the cinnamon mixture into the cake batter.

Bake for 27 to 30 minutes.


While cake is baking, make the Vanilla Icing Glaze by combining all ingredients and stirring til smooth.


When cake is done, remove skillet from oven and cool for 10 on a wire rack.

Then drizzle the glaze over the cooked cake.


Slice to serve like it were a pie while still warm.
