PUMPKIN SHEET CAKE

Today, I get the opportunity to share another recipe of a friend.  Janice made this delicious pumpkin sheet cake for a group of us at her house recently.  It was a big hit with everyone.  Here is the recipe.


PUMPKIN SHEET CAKE

1 - 16 oz can pumpkin
2   cups sugar
1   cup oil
4   eggs
2   cups all-purpose flour
1   teaspoon baking soda
1/4 teaspoon salt
2   teaspoon baking powder
2   teaspoon cinnamon

Preheat oven to 350 degrees.

Mix pumpkin, eggs, sugar and oil together.  Beat until mixture thickens.

Fold in dry ingredients.  Mix well.

Bake in a greased sheet cake pan for 20 - 25 minutes. 

Cool completely.  Then ice cake in pan with the frosting.

FROSTING

8    oz. pkg. softened cream cheese
1/4  cup soft margarine
1/2  box or 2  cups powdered sugar
1    teaspoon vanilla

Beat together the cream cheese and margarine til smooth.  Add the powdered sugar and vanilla and stir til smooth.
