STRAWBERRY ANGEL FOOD CAKE

Strawberry Angel Food Cake is a light tasting dessert that is just right for these hot summer days we are experiencing right now. My friend Janice served it this afternoon and I asked her if I could feature it on my blog. 

I love being able to share great recipes.  She said she has been making this so long that she used to use Dream Whip for the Cool Whip. Remember Dream Whip? Do they still make it? It was a powder that you mixed with ???? to make a cool whip. I told her I had a recipe called Cherry Yum-Yum that my mother often made and it used Dream Whip. I haven't made it in years because I didn't know how much Cool Whip to use. Duh! It probably doesn't matter. I will have to try it out this summer.  It is really good, too. 

Anyway, back to Janice. She said she didn't remember where she got the recipe. I told her you can tell it is old, because it just says "small pkg", "large pkg", no specific sizes. Love those kind of recipes! NOT. I have a bunch of those from my Mother.  Here is the recipe: 


STRAWBERRY ANGEL FOOD CAKE

1/2 - 3/4  Angel Food Cake
1  small pkg. Instant Vanilla Pudding
1  cup milk
1  pint Vanilla Ice Cream, softened
1  large pkg. strawberry Jell-o
2 cups boiling water
1  large pkg.(24 oz) frozen, sweetened sliced strawberries
1  carton (8 oz) of Cool Whip


         Break the angel food cake into crumbs and place in a 9 x 13 dish.  
    Set aside.

          In a large bowl, mix the instant pudding using only 1 cup of milk.
    Stir in the softened ice cream and spoon mixture over cake and 
    refrigerate for 10 minutes. 

          In another large bowl, mix 2 cups  of boiling water and jell-o.
    Mix until Jell-o is dissolved. Stir in frozen strawberries. Pour this  
    mixture quickly over pudding cake and refrigerate until jelled.  
          Top with Cool Whip.

********Personal note. When I make this, I am going to lighten it up by using sugar free/fat free vanilla instant pudding, skim milk, sugar free/fat free strawberry Jell-o, light ice cream, and fat free Cool Whip.  

Now where is that recipe for Cherry Yum-Yum?

  2. I think it was before your time, Sara.lol It was in a box about maybe 6 in tall, 4 in wide and a inch deep. I think there were 2 envelopes in the box. It would be on the shelf where the jell-o cheesecakes boxes are now. In fact, about that size.
