KATHY'S LEMON COOKIES

Looking at this cookie offered with the Cafe Treats at PWUMC, you might think you were going to bite into a sugar cookie. Imagine then after that bite, how you feel to taste lemon. Yes. Lemon. That's what some of the people experienced when they chose Cafe Treats Baker Kathy's Lemon Cookies. And they were really lemony with all of the lemon flavored ingredients she added to the recipe. If that wasn't enough she decided to make a lemon powdered sugar glaze to brush on top.

KATHY'S LEMON COOKIES

1-1/2     cups flour

1           teaspoon cornstarch

1           teaspoon baking powder

1/2        teaspoon salt

1           stick - (8 tablespoons) butter

1/2       cup granulated sugar

1/4       cup light brown sugar, packed

1          tablespoon lemon zest - or more

1          tablespoon fresh lemon juice

1/2       teaspoon vanilla

1/4       teaspoon lemon oil

1/2       teaspoon lemon extract

1          large egg


Preheat the oven to 350 degrees F. Grease or line with parchment paper cookie sheet. Set aside.

In a small bowl, stir together the dry ingredients. Set aside.

In another bowl, beat together the butter, sugars, and lemon zest until creamy.

Add the vanilla, lemon juice, lemon extract, lemon oil, and egg; beating until well incorporated.

Add the flour mixture and stir just until combined.

Drop the dough by tablespoonfuls onto the prepared baking sheet, spacing them about 2 inches apart. Flatten with the bottom of a glass that has been dipped in sugar or with a fork. (Kathy used a fork.)

Bake 11 - 13 minutes.

After they baked, Kathy made a sugar glaze with powered sugar, a little vanilla, and enough lemon juice to make a glaze of the consistency that she wanted and then drizzle each cookie with it.
