TACO SOUP

Nothing taste better than a bowl of soup when the weather turns cold. And cold it has definitely turned. I much preferred the 50s we had last week before our first big snow came this year, but it is January and it is the midwest. We got 6 inches of snow at our house (the area got different amounts depending on where they were), a winter wonderland. (See my pictures at the bottom of the post.) It has stayed a winter wonderland has hung around to the middle of the week because the temperatures have stayed below freezing or just a few degrees above. 

The news is not good either. The forecast is calling for possible precipitation later tonight and then more snow this weekend and a low of -5 degrees Saturday night, 11 degrees Sunday, and 4 degrees Sunday night. That is just too cold.

So what soup recipe did I find to make? Marilyn Hochstedler's Taco Soup from Hochstedler Family  Cookbook, A Collection of Edible Treasures from the family of Emanuel and Mattie Hochstedler. Emanuel was an ordained Mennonite minister and later Bishop of the Rich Valley Mennonite Church in Indiana. Marilyn was the wife of their fifth son, Lewis and lived in Nappanee, Indiana.

TACO SOUP

1       lb hamburger
1       small onion
6       cups (1-1/2 qts) tomato juice
1/3    cup sugar
2       cups sweet corn
1       15 - oz can chili beans
1       pkg. taco mix
Corn chips, shredded cheddar cheese, and a dab of sour cream (optional)


Brown hamburger and onion.

Add remaining ingredients (except optional ingredients) and
simmer for 15 minutes.

Serve with corn chips, shredded cheddar cheese and a dab of sour cream.

Enjoy.

  1. The soup sounds great. So glad you posted pictures of the most beautiful snow I have sen in my lifetime. . . It was awesome.

    1. Thanks Linda. We really enjoyed the soup. Most of the snow had melted but more is expected this weekend. The trees stayed looking like that until 2 days ago.
