Friend Ellen sent me this recipe several months ago because she thought I would like to make it. When we gathered at her house one afternoon recently to play canasta, she told me she had made it to serve to us. I was really glad she did since I hadn't ever gotten around to making it.
It was so pretty in the star-shaped bowl she had prepared it in. And Ellen was so right, I did really like it. Everyone did.
1 small package (4 serving size) raspberry Jell-O
1 cup hot water
1 cup applesauce
1 (12 - oz) package frozen raspberries
1 cup sour cream
2 tablespoons mayonnaise
2 cups miniature marshmallows
Dissolve the Jell-O in the hot water.
Stir in the applesauce.
Stir in the frozen raspberries.
Refrigerate for about 15 minutes or until mixture is fairly set.
Combine the sour cream, mayonnaise, and marshmallows.
Spread over the top of conjealed salad.
Refrigerate again until ready to serve.
Ellen uses sugar-free Jell-O, natural applesauce, light sour cream, and light mayonnaise. She also used the 4-oz individual size servings of applesauce. It is so much easier and convenient....she doesn't have to measure, simply uses two of them. Another reason she does this (and it is also the reason I do the same thing) is she doesn't end up wasting applesauce because she bought a jar.
