Friend Janice loves to make "dump cakes". Last week she had our Mexican Train group over for a fun afternoon. I had asked her earlier what dessert she was going to serve and she told me she was going to experiment with another dump cake.
Well, her experiment worked. It was really delicious and enjoyed by everyone. AND it is so easy.
SPICED APRICOT CAKE
1 spice cake mix
1 can apricot pie filling
3 eggs
Preheat oven to 350 degrees F. Spray a 9 x 13 - inch pan with nonstick cooking spray.
In a large bowl, combine all of the ingredients til well mixed. (Janice never dumps the ingredients in the pan and stirs them as traditional dump cake are made. It makes the pan messy. I agree with her.)
Pour and spread evenly in pan.
Bake for 25 - 30 minutes.
Can frost with canned frosting or a butter cream frosting.
She added a scoop of ice cream before serving.
