APPLE OAT BRAN MUFFINS




APPLE OAT BRAN MUFFINS

 Grandma's All - Time Favorite Recipes

3/4       cup all purpose flour
3/4       cup whole wheat (pastry) flour
1-1/2     teaspoon ground cinnamon
1            teaspoon baking powder
1/2        teaspoon baking soda
1/4        teaspoon salt
1            cup buttermilk
1/2        cup oat bran
1/4        cup packed light brown sugar
2           tablespoon canola oil
1            large egg
1-1/2    cup apples, peeled, cored, and finely chopped (I used 1 large Granny Smith apple)

Preheat oven to 400 degrees F. Spray 12 muffin cups or 30 mini muffin cups with cooking spray or use paper liners.


In a large bowl, combine the flours, cinnamon, baking powder, baking soda, and salt with a whisk.
In a smaller bowl, beat together the buttermilk, oat bran, sugar, oil, and eggs with a whisk.


Add the buttermilk mixture to the flour mixture, stirring until just combined.


Fold in the apples.


Divide the batter among the muffin cups.

I made the 30 mini muffins.
TIP!! Here is a tip to remember if you are not using all of the cups:
Fill the empty cups with a scant half filled with water. This allows for even baking AND keeps the pan from warping.


Bake 18 to 20 minutes for the 12 muffins or 12 minutes for the 30 mini muffins.


Remove immediately to cool on a wire rack.





Best served warm.

I made these mini muffins to take to Hillcrest Thrift Shop to share with the volunteers. When I work the first shift (10:00 - 12:30), I don't have as much time beforehand to bake anything and I also want to take something that isn't too sweet. These little muffins were just right. The volunteers really liked them too.
