Sunday the Cafe Treats offered two very popular treats -- Jean's Snickerdoodle Bars and Cindy's Butterscotch Scotchies. I did manage to try each since they were being recommended by so many people to other people and I have to agree that they were both awesome. Wayne even told me the Butterscotch Scotchies were really good. He didn't get to eat a Snickerdoodle bar though because they went so quickly. Jean brought them a little earlier than Cindy and they weren't cut as small as Cindy's.
JEAN'S SNICKERDOODLE BARS
3/4 cup butter, melted
3/4 cup brown sugar
1 cup sugar
2 eggs
2 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1 teaspoon cream of tartar
1/2 teaspoon salt
TOPPING:
1/4 cup sugar
2 teaspoon cinnamon
Preheat the oven to 350 degrees F. Grease a 9 x 13 - inch pan. Set aside.
Combine the butter and sugars.
Add the eggs and vanilla.
Add the flour, baking powder, cream of tartar, and salt. Mix well.
Pour the batter into the pan and sprinkle the top with the sugar/cinnamon mixture.
Bake 20 to 25 minutes.
Cut into squares/bars when completely cooled.
