Saturday night was our monthly gathering for the Tasty Bunch. Friends Carol and Keith were the hosts. We all enjoyed our dinner at Ventana Gourmet Grill in Excelsior Springs and then dessert and more conversation back at Carol and Keith's house.
Carol had told me Thursday at Mexican Train that she was making Cherry Cobbler for dessert. She has had the recipe for a long time and is one of her favorites. The cherries were ones she had frozen that she had gotten from Friends Sue and Al's cherry tree. If you are like me and do not have access to fresh cherries you picked from a tree, you can buy frozen ones in the grocery store. You can also substitute other types of fruit, if you wish.
Carol always cooks with stevia instead of sugar. This time she also used almond milk and no-dairy butter since her grandson Tyler was visiting and he has issues with dairy. The ice cream she served with it was Vanilla with No-Sugar-Added. (Tyler didn't eat any ice cream.) It was so good and the perfect ending of the evening.
Easy Day Cobbler
1 stick butter
1-1/2 cups sugar or stevia
1-1/2 cups flour
2-1/4 teaspoons baking powder
1/2 teaspoon salt
1-1/4 cups milk
1 teaspoon vanilla
4 cups berries (cherries) or 5 cups peaches or apples
1/2 cup water
3/4 cup sugar or stevia
Preheat oven to 350 degrees F. Melt butter in a 9 x 13 - inch pan in oven while it is preheating.
Mix the sugar or stevia, flour, baking powder, and salt together in a bowl.
Then stir in milk and vanilla until mixture is smooth.
Pour mixture over the melted butter (do not stir).
Top evenly with fruit.
Pour in 1/2 cup of water or cherry juice.
Then sprinkle with 3/4 cup sugar or stevia.
Bake 50 minutes or longer until done and slightly brown. The cobbler was done, but not nicely browned, so Carol puts the cobbler until the broiler in her oven to brown the middle.
Cool and cut into squares and serve with ice cream, if you like.
Serves 12.
Carol used cherry juice instead of the water.
