PEGGY'S APPLE CAKE

I am not sure why it has taken me so long to share Friend Luci's Peggy's Apple Cake that she made and served at last month's gathering for Mexican Train. It was so good. It has been y'all's loss.

I missed the game because my husband and I were at the funeral for one of the volunteers at Hillcrest Thrift Shop. I did get there in time to enjoy the cake and even watch her prepare the topping.



PEGGY'S APPLE CAKE

1/2         cup butter
2            cups sugar
1             teaspoon vanilla
2            eggs
2            cups flour
1-1/2      teaspoons cinnamon
1             teaspoon nutmeg
1/2         teaspoon salt
1/2         teaspoon baking sodq
6            tart apples, peeled and chopped

Preheat oven to 350 degrees F. Grease a 9 x 13 - inch pan.

Cream together the butter, sugar, vanilla, and eggs.

Mix together the flour, spices, salt, and baking soda and then mix into the creamed mixture.

Add the apples.

Spread in pan and bake for 40 - 45 minutes.

Cool.

Prepare topping before ready to serve.

CARAMEL SAUCE

1/4         cup butter
1/2         cup brown sugar
1/3         cup heavy cream


 Place ingredients in small saucepan and cook over heat stirring constantly til it boils.
Boil for 1 minute. 



Pour over cake or individual servings.

    1. Thanks, Summer. Hope you saw it after I corrected the recipe. (I left out the apples. lol) A friend on Facebook asked me if she had missed something. If it had any apples in it. I felt so bad. I corrected it and told her I guess I was more tired than I realized when I wrote it up last night. Need to be more careful. It tasted as good as it looked.
