Very refreshing tasting, friend Marilyn baked and served this Quick Lemonade Cake to the Northland New Neighbors' Farkle group last month. As you know I love quick and easy recipes and this one fits the bill perfectly.
QUICK LEMONADE CAKE
1 lemon cake mix
1 small box of instant lemon pudding mix
4 eggs
1 cup water
1/4 cup oil
1 can (6 - ounces) frozen lemonade, thawed but not diluted
2 cups sifted powdered sugar
Preheat oven to 350 degrees F. Grease and flour a 9 x 13 - inch pan. (My homemade Pan Grease would work perfectly.)
Combine the cake mix, pudding mix, eggs, water, and oil in a large mixing bowl. Combine on low for about 30 seconds and then increase speed and beat for 4 minutes.
Pour batter into pan and bake for 35 to 45 minutes or until cake is done. (I would recommend testing with a toothpick at 35 minutes.)
While the cake is cooling for 5 minutes, combine the lemonade and powdered sugar til smooth. Prick cake with a fork and spoon glaze over the cake to completely cover it.
