QUICK FRUIT & LEMON DROPS

 Baker Jean made these fabulous Fruit & Lemon Drop Cookies for the Cafe Treats this past Sunday. I heard several people remark about the yummy lemon taste after just the first bite of these delicious cookies. Jean said she added lemon juice to the recipe so that's probably why it was so lemony. I added it to the list of ingredients, too. She found a 6-oz bag of dried fruit that she used for the fruit.

QUICK FRUIT & LEMON DROPS

1/2     cup sugar

1        package (about 18 - ounces) lemon cake mix

1/3     cup water

1/4     cup (1/2 stick) of butter, softened

1        egg

1        tablespoon grated lemon peel

1        tablespoon lemon juice

1        cup mixed dried fruit bits


Preheat the oven to 350 degrees F. Grease cookie sheets. Place the sugar in a shallow bowl. Set aside.

Beat the cake mix, water, butter, egg, lemon peel, lemon juice with electric mixer on low until well blended. 

Beat in fruit bits just until blended. 

Shape dough into balls using a tablespoon cookie scoop and roll in sugar to coat.

Place 2 inches apart on cookie sheet.

Bake 12 to 14 minutes or until set. Cool 2 minutes on cookie sheets before removing to a wire rack to cool completely.
