We are used to traveling after Christmas to go to Colorado to have our Christmas with our older son Jeffrey and his family, but this year that trip was delayed until 2020 because we attended the wedding of Wayne's cousin's daughter in Tennessee. We left the day after Christmas and drove eleven hours to Tullahoma where we were staying. We had a full day to visit with cousins before the wedding on Saturday. Driving back on Sunday we took a different route and made it home in ten and a half hours. We had traffic the whole way home. By the time we got home I was tried and was looking forward to not ever getting in the car again.
Of course, after resting two days and getting doing some housecleaning done and even going out to dinner with friends New Year's Eve and then playing a game of canasta, I was ready to leave on New Year's Day to drive the nine hours to Colorado for a few days with the family. New Year's Day, btw, is a good day to travel. We had light traffic the whole day.
It helped having three full days before having to get back in the car (so hard to leave the family not knowing when we will go back) to drive back to Missouri. Traffic was a little heavier than going but nothing compared to the trip back from Tennessee.
So that's why I haven't had any new posts recently. We are traveling to Hilton Head (driving again) in ten days so I won't be as regular with my posts as I have been. I didn't sign up to work the register at Hillcrest Thrift Shop for January because we will be gone so much this much, but I still wanted to make something for the volunteers to enjoy. I had a recipe for a Dreamsicle Cake but couldn't find an orange supreme cake mix. Instead I decided to make Mildred Harmon's Orange Juice Cake recipe that I found in a Holiday Cookbook 2019 cookbook that I picked up at an assisted living facility they had for guests when we visited a relative in Tennessee. It is full of recipes and advertisements from the county. I was so excited when I saw it (there was only one copy on the table) but Wayne's cousin Nancy said I could take it.
ORANGE JUICE CAKE
1 box yellow cake mix
1 small (4-serving size) box instant vanilla pudding
4 eggs
1/2 cup oil
1-1/4 cups orange juice, divided
1 cup sugar
1/2 cup (1 stick) butter
Preheat oven to 350 degrees F. Grease or spray a 10 - inch Bundt pan. Set aside.
In a large mixing bowl, combine the cake mix, pudding, eggs, oil, and 1 cup of the orange juice with an electric mixer.
(I mix the cake mix and pudding mix first.)
Mix on low until ingredients are moistened (no more than 30 seconds). Scrape the sides of the bowl with a rubber spatula and beat for 2 minutes. Scrape the sides of the bowl again and then pour batter evenly in pan. Bake for 45 minutes. Just before the cake is done, prepare the glaze by combining the sugar, rest of the orange juice (1/4 cup), and the stick of butter in a medium saucepan over medium heat. Stir til butter is melted and mixture comes to a boil stirring constantly. Boil 2 minutes continuing to stir. Pour over the warm cake in pan.
Allow cake to cool in pan and then invert onto cake plate.
Loosen with a dull and allow the cake to sit inverted on plate until it releases.
