PIZZA TORTILLA PINWHEELS

While I am away from my kitchen, I will be sharing recipes that Friend Marilyn made and served the Farkle group for lunch last week. My pictures are limited but I think the recipes are easy to follow. They were certainly quite tasty and would be perfect if you are preparing a light lunch or even needed appetizers to serve at a party.

PIZZA TORTILLA PINWHEELS

8        tortilla (any flavor)
8        ounces cream cheese, softened (fat free or less fat will work)
1         tablespoon dry Italian salad dressing mix
2 - 3  tablespoons finely chopped banana pepper
1/4    cup diced red onion
2 - 3  green onions, thinly sliced
1/3    cup diced red pepper
1        (4-ounce) can chopped black olives, drained
1/2    cup shredded Mozzarella cheese
6       ounces sliced pepperoni
6       ounces sliced salami

In a medium bowl, combine the cream cheese, salad dressing mix, banana pepper, red onion, green onion, red pepper, olives, and shredded cheese. Mix well. (If you use an electric mixer, use low speed.)

Spread about 1/4 cup of the cream cheese mixture over a tortilla.

Place 3 - 4 slices each of the pepperoni and salami over the cream cheese mixture, leaving about 1/2 inch around the edge clear. Don't add too much meat or the tortilla will be hard to roll.

Roll up tightly.

Place wooden toothpicks in the center of the rolled tortilla about 1 inch apart. Cut in between the toothpicks to form pinwheels.

Repeat with rest of the tortilla and mixture.

Refrigerate before serving. (Marilyn made her the day before.)
