I really enjoyed these Apple Slice "Cookies". They would be perfect as a snack for the kiddoes (or adults) or for lunch. I often eat an apple cut in wedges with peanut butter for lunch with my yogurt. This would be a fun change.

APPLE SLICE "COOKIES"
1 apple
1/4+ cup peanut butter
1 - 2 tablespoons unsweetened coconut flakes
1 - 2 tablespoons chopped walnut pieces
1 - 2 tablespoons mini chocolate chips (Marilyn used cinnamon chips)
Lemon juice
Cut the core from the apple or you can cut the core out of the slices after you slice it.
Slice the apple into 1/4 - inch slices.
Place the apple slices in a bowl of water with a squirt of lemon juice to keep them from turning brown.
Blot each slice with a paper towel to dry it.
Spread each slice first with peanut butter.
Then top each with a sprinkle of coconut, nuts, and chips.
Enjoy as a snack or part of a light lunch.
