CHOCOLATE CHIP PEANUT BUTTER COOKIES

"I got two cookies, " yelled my husband. Not just one cookie, but two cookies. It is hard to just eat one.

I'm not surprised that he loves these cookies. He has always liked peanut butter cookies. I used to make them often because that's what he asked for if I gave him a choice. Then add chocolate chips (my favorite) and you have struck a gold mine with this recipe.

Our cookie jar was empty after eating the last Pride of Iowa cookies. I can't tell you how many cookbooks I flipped through trying to find a new cookie recipe to try. Finally I picked up my Heritage Country Harvest Cookbook with over 700 favorite recipes from the Amish in Northern Indiana. When I read Mrs. Paul Whetstone's recipe for Chocolate Chip Peanut Butter Cookies, I knew I had found the cookie I wanted to eat.  

I knew the recipe wouldn't make a whole bunch when I saw the ingredient amounts. When I find a recipe that makes a bunch, like 5+ dozen, I will look to see if I can cut the ingredient amounts in half. This one I didn't need to worry about that. Mrs. Whetstone's directions just said, "Bake at 375 degrees for 10-12 min." At least she included the oven temperature and the amount of time to bake. I have so many recipes that say nothing but the ingredients. Ugh.

I made them again yesterday afternoon to take to the boys next door and used chunky peanut butter instead of the creamy. They tasted good too.


CHOCOLATE CHIP PEANUT BUTTER COOKIES

1       stick of butter (1/2 cup)
1/2   cup sugar
1/2   cup brown sugar
1/2   cup peanut butter
1       egg
1       cup flour
1       teaspoon baking soda
1       cup chocolate chips (I used 60% cacao chips)

Preheat oven to 375 degrees F.


Cream butter that has been softened, sugars, and peanut butter til well blended and smooth.


Add egg and mix well.


Add flour and baking soda; blending well.


Add chocolate chips.


Using a small cookie scoop (mine holds 1 tablespoon of water), drop cookie batter about 2 inches apart on ungreased cookie sheet.


Bake 10 - 12 minutes.


Cool on pan for about a minute or two and then remove to finish cooling on wire rack.

  1. Oh these sound yummy! I have a confession. I hate making cookies. Up, down, up, down. I have no patience for that! LOL I am looking for a reason to make the peanut butter bar recipe you recently posted. That is more my likely, less up and down! First though I have several really ripe bananas I need to make into a cake! I already have muffins in the freezer, so think I'll make a cake this time. Oh and I made a cake Saturday night for friends! I couldn't find the recipe, so I made it up! I'll get around to posting it sometime soon so that I don't forget what I did!
