BLUEBERRY - ORANGE NUT BREAD

I keep finding myself lately using one cookbook, The Hardware Cafe Cookbook from the Hardware Cafe that recently closed in Liberty, MO.  But it just has so many good recipes.  I can't help myself.

This one is called Blueberry - Orange Nut Bread. I made it and took it to Hillcrest Thrift Shop where I volunteer last Saturday.  When I "work" the first shift (10:00 - 12:30) at the register, I don't want to take anything real sweet (although they would probably love that). So when I saw this recipe, it sounded like the perfect thing to take. I made it Friday night and just wrapped it in foil to take the next morning. It was a big hit.



BLUEBERRY - ORANGE NUT BREAD

3          cups flour
1          tablespoon baking powder
1/4       teaspoon baking soda
1/2       cup sugar
1          teaspoon salt
3          large eggs
1/2       cup milk
1/2       cup margarine, melted
1          tablespoon orange zest (peel)
1/3       cup orange juice
1         cup blueberries
1         cup chopped nuts 

Preheat oven to 350 degrees F.  Spray one large loaf pan or 2 mini pans (1-1/2 pt size) with non-stick cooking spray.


Measure out about 1 tablespoon of the flour toss the blueberries in it in a small bowl.

Combine the first five ingredients (flour, baking powder, baking soda, sugar, and salt) in a large bowl.


Combine the eggs, milk, margarine, orange peel, and orange juice  in another bowl.


Pour the liquid mixture in with the dry mixture and stir until flour mixture is completely moistened.


Add the berries and any leftover flour and the nuts and stir carefully.


Pour into prepared pans and bake for 1 hr and 15 minutes for one large loaf or 45 - 50 minutes for the smaller loaves.

Check doneness with a toothpick inserted in the center. Cool in pans on wire rack for at least 10 minutes.


Remove and continue cooling.
