CARROT CAKE PANCAKES

Recently my husband and I had breakfast at IHOP following church.  They currently are featuring their pumpkin pancakes and carrot cake pancakes.  I really like their pumpkin pancakes, but this day I decided to try the carrot cake pancakes.  They were delicious!!!!!!! 

I came home and quickly started searching for a recipe online so I could make them at home.  I found several recipes but only one had the pineapples, nuts, raisins, etc in it.  That one was from Whole Foods Market.  

Well, I finally got around to making them today.  I had fasted this morning for a doctor's appointment and by the time I got home (almost noon), my tummy was growling.  I considered asking my husband if he wanted to go out and get some lunch, but instead I remembered the recipe and decided it was a perfect time to try them.

CARROT CAKE PANCAKES


1-1/4   cup buttermilk pancake & waffle mix (I used the "complete" mix)
1/2      teaspoon ground cinnamon
3/4     cup + 2  tablespoons (skim) milk
1          tablespoon canola oil
1          tablespoon raisins
1/4      cup canned crushed pineapple, drained well
3/4     cup finely grated carrots (see note at the bottom)
1/4     cup chopped pecans

In a large bowl, whisk together pancake mix and cinnamon.








Add milk and oil and whisk together until combined.
Add raisins, pineapple, carrots, and pecans.









Stir until well combined.









Heat a large skillet over medium heat.  Brush lightly with some oil.  Working in batches, form each pancake by dropping 1/4 cup batter onto the skillet.  (I made mine a little bigger.)
Cook until golden on bottom, 3 to 4 minutes.
Flip and cook 2 to 3 minutes longer.
Repeat with remaining batter and oil to make 8 to 9 pancakes total.  (I made 4 fairly large pancakes.)



Optional topping:  2  tablespoons powdered sugar and 1/2 to 3/4 teaspoon milk. 






Mix and stream over the top pancakes.

NOTE:  Oh Yeah, I almost forgot.  To make sure your carrots are grated fine, make sure you hold the carrot perpendicular with the grater and work in a small area of the grater.  

This way you will have fine, shredded pieces of carrots.

  2. Yes they did, Jean. Make sure you grate them on the smaller size. The bought one that are grated so big might not. Let me know how they turned out.

  5. If I recall correctly, the frosting was a cream cheese one. Any suggestions? Did these taste the same?

    1. I don't remember re the frosting. I thought these pancakes were just as good. I do have an optional powdered sugar frosting in the post. If you wanted to add a little cream cheese to this, I think it would be fine. Use softened cream cheese or the whipped cream cheese for better mixing. Rereading the post makes my mouth water. Thanks for your question.
