APPLE SPICE CAKE

This month we were the host for the Tasty Bunch, a small group in the New Neighbors League Northland KC that is made up of 6 couples who go to different restaurants each month and then back for dessert at the home of the "host".

We decided to go to Red Robin's Gourmet Burgers for dinner. I was surprised so many in the group hadn't been there. Everyone really enjoyed their meal.

For dessert I decided to make a cake that I saw the general recipe online.  

I decided to make mine using a spice cake mix and lite apple pie filling. It was super easy to prepare and smelled so good while it was cooking. I wish my friends could have been met with that smell when they came in the house after dinner.

Everyone was very complimentary. It was really good. Two of our friends weren't able to come over for dessert. That meant that we had two servings that my husband and I were able to enjoy the next day. Oh! Boy!




APPLE SPICE CAKE

1     spice cake mix
3     eggs, beaten
1     can lite apple pie filling



Preheat oven to 350 degrees F. Grease the bottom of the pan only.







Pour the pie filling in the mixing bowl and turn the mixer on slow to break up the apple slices with the beaters. Use a knife and cut up any pieces that don't break up.






Add the beaten eggs and combine.








Stir in the cake mix on slow just to combine. Then beat for 2 minutes on medium speed til smooth.





Pour batter into pan.









Cook for 30 minutes. Check doneness with a toothpick inserted in the center.

Cool on wire rack.




Serve with a dollop of whipped topping. Serves 12.
