HAM AND CHEDDAR NOT-SO-IMPOSSIBLE PIE

This "pie" is so unbelievably easy. It also can be served for dinner with a salad or at breakfast with a glass of juice. I made it for dinner but warmed it up for breakfast. I bought a package of chopped ham, but if you had some leftover ham that you had baked, that would be even better. (Much more flavor)



HAM AND CHEDDAR NOT-SO-IMPOSSIBLE PIE

1-1/2       cups chopped ham
1              cup shredded sharp cheddar cheese
1/2          cup biscuit mix
1              cup milk
2             large eggs

Preheat oven to 400 degrees F. Spray a 9 - inch glass pie plate with non-stitch cooking spray.


Sprinkle the ham evenly over the bottom of the pie plate.


Cover with the cheese.


Whisk together the biscuit mix, milk, and eggs together in a bowl til nice and smooth.


Pour mixture evenly over the cheese. (See those little "lumps"...you don't want to leave them on the top. They don't always break down.)


Bake for 20 - 25 minutes until golden brown and firm to touch when lightly touched in the center.


Remove and allow to cool 5 minutes before you cut and serve it.
