WHOLE WHEAT WAFFLES

I saw a recipe yesterday for Churro Waffles from chica chocolatina. I decided I would like to try the waffles but not dip them in the sugar mixture. (I do try to watch my sugar intake.)

Anyway, the waffles were really good.  We often have waffles for dinner (supper) especially on Wednesday nights because I have to be at the church at 6:00 for handbell practice.  It is nice to have a recipe for waffles instead of using the box mixes and whole wheat ones, too.



WHOLE WHEAT WAFFLES

2        cups whole wheat pastry flour
4        teaspoon baking powder
1          teaspoon salt
1/4     teaspoon cinnamon
1         tablespoon truvia (2 tablespoons of sugar or Splenda)
2        eggs
1-1/2  cups warm milk (heat 45 seconds in microwave)
1/3     cup margarine, melted
1         teaspoon vanilla 

Spray waffle iron with cooking spray and preheat.

Combine the flour, baking powder, salt, sugar, and cinnamon in a large bowl with a whisk.

In a smaller bowl, beat eggs. Then add milk, margarine and vanilla. Mix well.

Pour into dry ingredients and beat til well blended with whisk.

Cook according to your waffle iron's directions.

and serve.

Recipe makes 5 waffles.
